BROCCOLI `N TURKEY ROLL - UPS | |
1 (10 oz.) pkg. frozen broccoli or asparagus spears 8 oz. thinly sliced, fully cooked turkey breast or ham 2 English muffins 1 (5 oz.) jar cheese spread with blue cheese Or 1/2 of an 8 oz. container port wine or Swiss flavored cold pack cheese food 1/4 c. milk Paprika (optional) Place frozen broccoli or asparagus spears in a colander. Run hot water over vegetable just until thawed. Drain well. Meanwhile, in a large skillet or an electric skillet place a wire rack or a large open steamer basket. Pour in enough hot water to almost reach the rack. Bring to boiling, then reduce to a simmer. While water is coming to a boil, for vegetable rolls, divide meat into 4 portions. Place thawed broccoli or asparagus spears on one edge of each meat portion. Roll meat around vegetables. If necessary, secure with wooden toothpicks. Carefully place rolls, seam sides down, on the wire rack or steamer basket. Cover skillet. Steam about 10 minutes or until heated through. While vegetables rolls are steaming, split and toast muffins. For sauce, in a saucepan combine cheese and milk. Cook over medium heat until cheese is melted, stirring occasionally. To serve, place a vegetable roll on top of each muffin half. If necessary, remove toothpicks. Spoon warm sauce over rolls and muffins. If desired, sprinkle with paprika. Makes 4 servings. Assembling the roll - ups: Use either sliced luncheon meat or thinly sliced meat from the deli for the meat - vegetable rolls. Divide the meat into 4 portions. Then place some of the broccoli or asparagus spears on one edge of each portion of meat. Roll the meat around the vegetables jelly - roll style. Secure the vegetable rolls with wooden toothpicks. Carefully place the vegetable rolls, with their seam sides down, on the wire rack or steamer basket. Then cover the skillet and steam the vegetable rolls about 10 minutes or until they are heated through. |
