RHUBARB PUDDING 
4 c. cut up rhubarb
2 c. sliced strawberries (opt.)
1 (3 oz.) pkg. strawberry Jello
1 c. sugar
1 box yellow cake mix
1 c. water

In bottom of 9"x13" pan put rhubarb, strawberries, Jello and sugar. Top with cake mix and sprinkle water over it. Bake at 350 degrees for 40 to 45 minutes. Serve plain or with whipped cream or ice cream.
