3 apples (good-sized), peeled and chopped
1 1/2 c. oil
2 1/2 c. sugar
3 c. flour
3 eggs
1 1/4 tsp. baking soda
1/4 tsp. salt
1 c. nuts, chopped
1 can Angel Flake coconut
1 tsp. vanilla

Cream sugar and oil. Add eggs, one at a time, with a few spoons of flour between eggs, beating after each addition. Stir in remaining dry ingredients and vanilla. Add apples, nuts and coconut; mix well. Grease and flour a tube pan.

Bake at 350°F for 1 1/2 hours. Let set in pan 10 to 15 minutes before turning out.
