FRESH APPLE CAKE 
CAKE:

2 eggs
2 c. sugar
2 tsp. vanilla
1 1/4 c. oil
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 c. peeled, diced, chopped Jonathan apples
1 c. chopped pecans

FROSTING:

1 stick butter
1 (8 oz.) Philadelphia cream cheese
1 tsp. vanilla
1 (16 oz.) box powdered sugar

Cake: Beat eggs and sugar, mixing well. Add vanilla, oil, then dry ingredients. Blend well. (Dough will be very stiff.) Add apples and nuts. Place dough in a greased and floured 13 x 9 inch pan. Bake at 350 degrees for 50-55 minutes. Serves 8-12.

Frosting: Combine butter, cream cheese and vanilla; blend well. Add powdered sugar and beat until smooth. Spread on cooled cake.
