7 - UP CAKE | |
1 box lemon cake mix 1 box instant pudding mix (lemon or pineapple) 3/4 c. Wesson oil 1 (10 oz.) bottle 7-Up 4 whole eggs Mix together. Cook at 350 degrees. Makes 3 layers. FILLING, COCONUT - PECAN FROSTING: 1 c. evaporated milk 1 c. sugar 3 egg yolks 1/4 lb. butter 1 tsp. vanilla or lemon flavor Cook and stir over medium heat until thickened, about 12 minutes. Add 1 1/3 cups Bakers angel flake coconut and 1 cup chopped pecans. Beat until thick enough to spread. Makes 2 2/3 cups. |
