OATMEAL MUFFINS 
1 c. flour
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
1 c. buttermilk
1 c. oatmeal (quick cooking style)
1/2 c. brown sugar
1 egg, beaten
1/2 c. oil

Preheat oven to 375 degrees. Grease a 12-cup muffin pan. Sift together flour, salt, baking powder and soda. Set aside. Pour buttermilk over oatmeal. Add brown sugar, egg and oil. Mix well. Stir in sifted ingredients. Bake 25-30 minutes.
