OATMEAL MUFFINS | |
1/4 c. shortening 1/2 c. brown sugar 1 egg 1 1/2 c. unbleached flour 2 1/2 tsp. baking powder 3/4 tsp. baking soda 1/2 tsp. cinnamon 1/4 tsp. salt 1 c. uncooked oatmeal 1 1/4 c. milk Beat shortening and sugar together until creamy. Add egg and beat well. Combine flour, baking powder, baking soda, cinnamon, salt and oatmeal; mix well. Alternately add flour mixture and milk to egg mixture. Fill greased or paper lined muffin pan cups 2/3 full. Bake at 375 degrees for 30 minutes. |
