MONDAY'S RED BEANS AND RICE 
4 c. kidney beans
1 1/2 c. onion, chopped
1 1/2 lbs. sausage, cut in chunks and partially cooked
2 tbsp. vegetable oil
2 tbsp. flour
1 c. green peppers, chopped
1 c. tomato sauce
Salt and pepper to taste
3 c. rice, cooked
Chopped scallions for garnish

Cover beans with water and soak overnight. Drain, reserving 1 cup liquid. Then, barely cover with water and bring to a boil. Add onions and sausage. Reduce heat, partially cover and cook for about 30 minutes or until beans are tender.
