1 Duncan Hines yellow cake mix (made according to directions) 1 lg. box instant vanilla pudding (made according to directions) Lg. can crushed pineapple 1/2 c. sugar 1 pt. whipping cream 1 c. coconut While cake is baking, bring to a boil in a saucepan pineapple and sugar. When cake is removed from oven, pour pineapple mixture over the top. Cool. Make pudding according to directions and spread over cooled cake and refrigerate. Mix whipping cream and spread over pudding layer. Cover with coconut. Keeps for days in the refrigerator. | |

I made this with sugar free pudding and sugar free cake. Pineapple is verboten to me because I have diabetes. I love cooking and I love eating, but it is so very hard to find recipes we can enjoy. we are not huge dessert eaters, but that seems to be the easiest to find. I would like a meal I could feed my family and enjoy it with them. Can anyone help?
