HARVEST RELISH 
3 qt. shredded zucchini or chopped Jerusalem artichokes
3 lb. shredded cabbage (1 lg. head)
1 cauliflower, sliced
1 qt. chopped onion
6 lg. peppers (chopped) 3 red, 3 green (1 c. pimento may be sub. for red)

Soak vegetables in 1 gallon of water and 1 cup salt overnight. Squeeze liquid from vegetables the next morning and add: 3 lb. sugar 1 tbsp. turmeric 3 tbsp. mustard seed 1 tsp. ginger 1/2 tsp. cinnamon 1 tbsp. coarsely ground black pepper

Bring to boil, then add (made into a paste with a little vinegar added) : 3/4 c. plain flour
