CREAM CHEESE SQUARES | |
1/3 c. firmly packed light brown sugar 1/2 c. ground walnuts 1 c. all-purpose flour 1/3 c. butter, melted 1 (8 oz.) pkg. cream cheese, softened 1/3 c. sugar 1 egg 1 tbsp. lemon juice 2 tbsp. milk or cream 1 tsp. vanilla Confectioners sugar Preheat oven to 350 degrees. Grease an 8 inch square baking pan. Mix brown sugar, nuts and flour together. Stir in butter and mix with hands until crumbly. Remove 1 cup of mixture to be used later as topping. Place remainder in baking pan and press firmly. Bake for 12 to 15 minutes. Beat cream cheese with sugar until smooth. Beat in egg, lemon juice, milk and vanilla. Pour onto crust. Top with reserved crumbs. Return to oven and bake for 25 minutes. Cool and cut into 2 inch squares. Top with confectioners sugar. Yield: 16 squares. May be frozen. |
