ROASTED POTATOES 
4 lg. potatoes, peeled & cut into even size chunks
Bacon fat or oil to dip potatoes in
Salt & pepper to taste, can use flavored salt

Dry potato chunks and dip into fat or oil. Place on a cookie sheet, well spread out. Bake in a hot oven about 400 degrees until browned. Stir often. Remove from cookie sheet and place in an oven proof pan, well drained of fat. Cook a short time longer to crisp. NOTE: Bacon fat gives a good flavor but oil is ok, too.
