SWISS CHARD FRITTATA | |
1 bunch green onions (about 6), finely chopped Olive oil 6 c. cooked swiss chard, chopped 8 eggs 3/4 c. Parmesan cheese, grated 3 c. cooked rice 1 c. cottage cheese (low-fat if desired) Salt and pepper to taste Preheat oven to 375°F. Sauté green onions in oil and mix with the rest of the ingredients (adding eggs one at a time). Mix well. Put in greased 9 x 13 inch pan and bake in preheated oven for 35-40 minutes. Cut into squares and serve warm or cold. |
