ARTICHOKE FRITTATA 
1 pkg. frozen artichoke hearts (thawed)
2 tbsp. oil
4 beaten eggs

Mix: 1/4 c. Romano grated cheese 1/2 tsp. parsley 1/2 tsp. basil 1/2 tsp. garlic powder Salt and pepper to taste

Brown artichokes in oil (8 inch frying pan). Sprinkle bread crumb mixture on artichokes and continue cooking until bread crumbs are thoroughly mixed and cooked. Add eggs (beaten) and cook until eggs are cooked. Serve hot or cold.
