DELMONICO POTATOES 
2 c. cold boiled potatoes, diced
1 1/2 c. medium white sauce
1/3 c. grated mild cheese
Salt and pepper to taste
1/2 c. bread crumbs
1/2 tsp. paprika

WHITE SAUCE:

Melt 2 tablespoons after it foams, add 2 tablespoons flour, stir. Cook over low heat for 3 minutes. Remove from heat and slowly add 1 1/4 cups hot milk, stir constantly. Return to heat, stir until it boils and cook 3 minutes. Cool before using below.

Gently mix diced potatoes and white sauce. Butter a baking dish, arrange potato mixture and cheese in alternate layers. Top with bread crumbs, sprinkle with paprika. Bake at 325 degrees about 20 minutes.
