1 sm. onion 1 lg. clove garlic, chopped 7 tbsp. olive oil 3 stalks celery 3 sm. carrots 1 sm. turnip 1 med. zucchini 2 med. potatoes 1 c. frozen peas 1 c. red kidney beans 1 (8 oz.) tomato sauce 8 c. water 6 bouillon cubes 1/2 c. ditalone pasta Grated Parmesan cheese Chop onion and garlic fry in oil in large pot. Clean and dice vegetables. Add to pot and simmer a few minutes stirring to coat with oil. Add peas and beans with liquid and tomato sauce. Stir with wooden spoon and simmer 10 minutes. Boil water and dissolve bouillon. Pour in pot and simmer 45 minutes stirring occasionally. Add pasta and simmer until cooked. Serve with grated cheese. |
