9 - BEAN SOUP 
1/3 c. of 9 different beans (about 1 lb.) :
Big and little lima beans
Red kidney beans
Navy beans
Black eyed peas
Pinto
Split peas
Lentils
Red sm. beans

2 qt. water 1 lg. onion, chopped 1 extra lg. can tomatoes 1 tsp. chili powder Juice of 1 lemon 1/4 c. pearl barley Salt and pepper, to taste

Wash beans thoroughly. Place in large kettle overnight. Cover with water and 2 tablespoons salt. In morning, drain.

Add 2 quarts water, ham and ham shanks or hocks. Bring to boil; simmer slowly 3 hours. Add onion, tomatoes, chili powder, lemon, and barley. Continue simmering 1 hour. Makes 3 quarts.

Freezes beautifully!
