This package contains 1/4 cup each of large lima beans, baby lima beans, lentils, navy beans, split peas, barley, pinto beans, kidney beans and black-eyed peas.
Wash and soak beans overnight in water to cover plus 1 tablespoon salt. In the morning, drain beans and place them in a pot with 2 1/2 quarts water, a ham bone or ham scraps, 1 large chopped onion, 1 quart stewed tomatoes, 1 teaspoon chili powder, dash of red pepper, juice of 1 lemon, 1/2 cup chopped celery, salt and pepper to taste. Bring to boil. Simmer, uncovered, 4 hours. This makes approximately 1 gallon soup.
