COUNTRY BEAN SOUP | |
1 lb. ground beef 1 c. chopped onion 1 clove minced garlic 1 (15 oz.) can kidney beans 1 c. sliced carrots 1 c. chopped celery 1/4 c. uncooked regular rice 2 (15 oz.) cans stewed tomatoes 3 1/2 c. water 5 beef bouillon cubes 1 tbsp. parsley 1 tsp. salt 1/4 tsp. basil 1 c. frozen cut green beans Brown beef, onion and garlic. In 4-quart saucepan, add beef mixture to next 10 ingredients. Bring to boil, then simmer on low for next 40 minutes. Add green beans and simmer an additional 10 minutes Makes 3 quarts. Our family has been eating this since we were kids. It must have been a recipe from Grandma "on the farm"--Colonial American. It is best made in the winter when supplies of fresh vegetables are limited. Simple ingredients but makes a colorful and tasty meal. |
