FROSTED CARROT BARS 
4 eggs, beaten
2 1/2 c. flour (1/2 white, 1/2 whole wheat)
2 tbsp. wheat germ
2 c. sugar (1/2 white, 1/2 brown)
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1 1/2 c. vegetable oil
3 jars strained (baby food) carrots or 2 c. grated fresh
1/2 c. chopped walnuts

CREAM CHEESE FROSTING:

1 pkg. (3 oz.) cream cheese
4 tbsp. butter, softened
1 3/4 c. powdered sugar
1/4 tsp. vanilla

Grease 15 1/2 x 10 1/2 inch jelly roll pan. Preheat oven to 350 degrees. In large bowl beat eggs well. Add remaining ingredients. Beat well at low speed. Stir in walnuts, spread batter in pan. Bake 30-35 minutes or until toothpick inserted in center comes out clean. Cool completely. Frost with cream cheese frosting.

Mix all frosting ingredients in small bowl. Allow speed to blend, then high until mixture is smooth and creamy.
