VEGETARIAN CHILI 
1 qt. canned tomatoes
1 lg. can tomato sauce
1 onion, chopped
1/2 med. green pepper, chopped
3-4 tbsp. chili powder
1 tsp. cumin
Cayenne pepper to taste
1 lg. can kidney beans, with juice
2/3 c. raisins
2/3 c. cashews
1 can beer

Mix all ingredients except cashews and beer, in a large pot. Simmer for about two hours, adding the cashews during the last 20 minutes. Add beer and simmer for another 15-30 minutes until thick.

This is delicious! Your kids will never know there are cashew or raisins in it, and remember that all the alcohol in the beer will evaporate during cooking.
