HOPPING JOHN 
2 tbsp. butter
1 med. onion, chopped
2 (15 oz.) cans blackeyed peas
1 tsp. black pepper
1/2 tsp. cayenne pepper
1 tsp. seasoned salt
1/2 tsp. garlic powder
2 c. chopped ham
3 c. cooked long grain rice

Saute onions in butter. Add peas, peppers, ham, and other spices. Heat thoroughly. Fold in cooked rice.

For extra spicy dish use Trappey's jalapeno black eye peas.
