BLUEBERRY OAT MUFFINS | |
1/3 c. sugar 1/4 c. butter, softened 1/4 c. whole wheat flour 3/4 c. Quick Oats or Old Fashioned 3/4 c. + 2 tbsp. white flour 1 egg 4 tsp. baking powder 1/2 tsp. baking soda 1 c. buttermilk 1 tsp. vanilla 1 1/2 c. fresh or well drained blueberries Cream sugar and butter until fluffy. Add egg and mix dry ingredients and alternately with buttermilk. Add vanilla and fold in blueberries. Spoon batter into greased muffin tins. Sprinkle with Topping over top of batter. Bake at 375 degrees for 25 to 30 minutes. TOPPING: Mix 2 tablespoons of melted butter, 1/4 cup flour, 1/4 cup sugar and 1/2 teaspoon cinnamon together until crumbly. |
