BLUEBERRY OAT MUFFINS 
1 c. rolled oats
1 c. sour milk (or add 2 tbsp. vinegar or lemon to 7/8 c. milk)
1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda and salt
3/4 c. brown sugar
1 egg
1/4 c. melted butter
1 c. blueberries

Combine oats and milk in same bowl.

In another bowl combine flour, baking powder and soda, salt and sugar; stir well.

Add egg and butter, oats and milk mixture. Stir until all ingredients are moistened. Fold in berries. Fill well greased muffin pan (3/4 full). Bake at 400 degrees for 15-22 minutes.
