BLUEBERRY OAT MUFFINS 
1 c. quick oats
1 c. sour milk (add 2 tbsp. lemon juice to 7/8 c. milk)
1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. brown sugar
1 egg, beaten
1/4 c. butter, melted
1 c. blueberries

Combine oats and sour milk in small bowl and let stand. In large bowl mix flour, baking powder, baking soda, salt and brown sugar. Stir well to blend. Add egg and melted butter to oat mixture and mix well. Add oat mixture all at once to dry ingredients. Stir just until all ingredients are moistened. Gently fold in blueberries. Fill muffin tins 3/4 full. Bake 15-20 minutes at 400.
