PEACH PECAN BREAD | |
2 c. flour 3/4 c. sugar 1 tbsp. baking powder 3/4 tsp. salt 1 (16 oz.) can peaches in syrup 6 tbsp. butter, melted 2 eggs 1 tbsp. lemon juice 1 c. coarsely chopped pecans Preheat oven to 325 degrees. In medium size bowl, combine flour, sugar, baking powder, and salt. Set aside. Drain peaches and reserve syrup in a large bowl, sue an electric mixer to blend peaches to a lumpy puree. Add butter, eggs, lemon juice, and 1/4 cup reserved syrup. Beat until blended. Add flour mixture and pecans. Fold until moistened. Pour into four greased 5 3/4 x 3 1/4 x 2 disposable loaf pans. Bake for 30-40 minutes or until lightly browned. Cool on wire rack. Makes 4 loaves. |
