RECIPE COLLECTION
“CORN CASSEROLE” IS IN:

CORN CASSEROLE 
1 16 oz. can whole corn, drained
1 16 oz. can cream style corn
2 eggs, beaten
1 cup sour cream or plain Greek style yogurt
1 stick butter
salt and pepper, to taste
1 box Jiffy Corn Muffin Mix

Combine first 6 ingredients. Mix well. Add muffin mix and stir until combined.

Transfer batter to a greased 2-quart casserole dish and bake for 1 hour at 350°F.

Actually made this but forgot the eggs. The result was a creamier texture, and it was delicious. I also only used about 4 tablespoons of butter and it did not affect the taste but does affect calories. Will be repeating the recipe without the eggs in the future.

I'm gluten free and have to use GF corn muffin mix but follow recipe exactly with GF mix. Add a small bit of honey and its as good as the real thing.

Great recipe, very easy to follow. My family loves this dish & it's easy to add other things to this so you can "customize" it. I make mine with a little red pepper for a kick & bacon bits. Also, very good with shredded cheddar mixed in & then also baked on top!
