“CRANBERRY APPLE CASSEROLE” IS IN:
NEXT RECIPE:  CRANBERRY JELLO SALAD

CRANBERRY APPLE CASSEROLE 
1 cup whole cranberries
1 1/2 cups chopped apples, unpeeled
3/4 cup sugar
1/2 cup chopped nuts
1/2 cup brown sugar
1/2 cup (1 stick) butter
1/2 cup oatmeal
2/3 cup flour

Combine cranberries, apples and sugar in an ovenproof baking dish. Mix nuts, sugar, butter and oatmeal with flour and pat into dish (mixture will be like a moist paste. Add a tablespoon of water, if needed.)

Bake at 350°F for 45 minutes or until done.

As to the one cup of whole cranberries -- does that refer to canned whole cranberries, or frozen whole cranberries or thawed frozen whole cranberries? I have alot of frozen whole cranberries in my freezer that I would like to use in this recipe. If I do, do I need to thaw them first?

Hi Mary,

The recipe assumes fresh cranberries, but frozen cranberries can be used. If you allow them to partially thaw for about 10-20 minutes they should be fine. I wouldn't microwave them because they would become soft.

Yes, you use Granny Smith and Red Delicious. That way you have red and green peelings that make it colorful for the holidays. Thats how I do mine anyway.

This casserole is a staple in our family at all holidays. It is delicious right out of the oven, cold, re-warmed, with ice cream. We experiment sometimes adding a little cinnamon and using splenda instead of sugar. It is always delicious. I freeze several bags of fresh cranberries at the end of season just so I'll have them for this dish. Enjoy and Happy Holidays.

Good recipe, I modified by adding other fruits, such as peaches, raspberries - whatever I have. I reduced the butter by putting the dry mix on top of the fruit and dotting with 1/2 stick of butter. Delish!

This is the best thing since sliced bread. One of the Ladies at church brought this casserole and I am hooked. It is like robbing the candy store good. Easy to make and will be a hit at the table every time. It is even good cold but certainly taster right from the oven, plus the aroma of it cooking is another story. Enjoy!
