ZUCCHINI STEW 
1-3 zucchinis, sliced, remove seeds
1 can green beans
1 green pepper
1 sm. onion
2-3 potatoes
1 lg. can tomatoes in puree (do not drain)

Cube potatoes and boil in salted water. Set aside. Stir-fry peppers and onion in large frying pan in small amount oil. Add tomatoes, bring to boil, then simmer. Add zucchini, salt and pepper, fold. Bring to boil, then simmer covered, stirring occasionally until zucchini cooks. After zucchini is cooked, add beans, potatoes, and simmer until all ingredients are warm. Can be served over hot rice or noodles, or served by itself.
