ZUCCHINI STEW 
1 lg. zucchini, sliced
3 potatoes, sliced
1/2 c. sliced onion
Salt, pepper, garlic, salt, Accent, basil and rosemary to taste
Fresh tomato, blended in blender to make 2 cups
1/2 c. oil

Heat zucchini, potatoes, onion and seasonings in oil until hot. Add tomato and stew for at least 45 minutes for flavors to cook through. Serve with fresh bread.
