STEWED ZUCCHINI 
1 med. onion (diced) (2/3 c.)
1 lb. zucchini (cubed) (3 c.)
1/2 tsp. oregano
1 lg. tomato (chopped coarse) (2/3 c.)
2 tbsp. oil
1/2 tsp. salt
1/4 tsp. pepper

In medium size saucepan, saute onions in oil until tender, about 5 minutes. Add zucchini. Cover and cook over low heat, stirring occasionally about 10 minutes or until tender but crisp. Add remaining ingredients, cook 2 minutes or until heated thoroughly. Serves 4.
