ZUCCHINI, ITALIAN - STYLE
"STEWED"
 
4 tbsp. bacon fat or butter
1 med. onion, finely cut
2 lg. tomatoes, sliced or 1 (No. 303) can tomatoes
6 sm. zucchini
Grated cheddar cheese

Melt fat in saucepan. Add onion; brown lightly. Add tomatoes, cook for 2 to 3 minutes. Wash zucchini; cut into 1/4 inch slices. Add to ingredients in saucepan. Cook, covered, for 15 to 20 minutes or until zucchini is tender. Add water if needed. Sprinkle with cheese as served. Yield: 6 servings.
