1/2 cup (1 stick) butter, at room temperature 1 1/4 lb. grated cheddar cheese, at room temperature 1 cup self-rising flour 3/4 cup all-purpose flour 1/4 tsp. red pepper 1/4 tsp. cayenne pepper 1/2 tsp. dry mustard Preheat oven to 350°F. Cream together butter and cheese (by hand works best). Sift flours, peppers and mustard together. Gradually add dry ingredients to creamed mixture mixing well after each addition. Roll batter extremely thin on ungreased cookie sheet. Cut with a pizza cutter into small squares. Bake at 350°F for 30 minutes or until lightly browned and crispy. Allow to cool slightly. Note: If you choose to double the recipe use 1 3/4 cups all-purpose flour and 1 3/4 cups self-rising flour. Submitted by: J.S. |
