CHICKEN ITALIANO 
1 pkg. boneless chicken breast halves or boneless chicken thighs
2 tsp. butter
1/4 lb. mushrooms, sliced
1/3 c. chopped green pepper
1 bay leaf
1 (15 1/2 oz.) jar marinara sauce

Sprinkle chicken lightly with pepper. In non-stick skillet, brown chicken on both sides in melted butter over high heat. Sprinkle with mushrooms and green pepper. Add bay leaf. Pour marinara sauce over top. Cover and simmer 20 minutes or until chicken is tender. Baste with juices occasionally. If necessary, add water to prevent sticking. Serve with spaghetti or rice.
