LEMON CHEESECAKE DELIGHT 
1 (6 oz.) graham cracker crust pie crust
1 (8 oz.) pkg. cream cheese, softened
1/2 c. mayonnaise
1/2 c. sugar
3 eggs
2 tsp. grated lemon rind
1 tbsp. lemon juice (optional)
1 tsp. vanilla

In large bowl with mixer at medium speed beat cream cheese and real mayonnaise until smooth; gradually beat in sugar. Beat in eggs, one at a time, beat in rind, juice and vanilla. Pour into pie crust; place on cookie sheet. Bake in 350 degree oven 30 to 35 minutes or until set. Chill 4 hours.
