SUMMER TUNA CAKES 
1 med. zucchini
1 can tuna, drained
1 1/2 c. bread cubes (3 slices)
1 egg
2 tsp. grated onion
1 tsp. lemon juice
1/4 tsp. salt
1/4 tsp. pepper

Finely shred zucchini. Pat dry with paper towel. Mix zucchini with rest of ingredients. Shape mixture into 2 (3 inch) round patties. In hot salad oil, cook patties until browned on both sides, 8-10 minutes.

Toast whole wheat slices. For serving on plate, cut each whole wheat toast slice diagonally in half; spread with some mayonnaise. Top with a lettuce leaf, tomato slices, and a tuna patty. Top each sandwich with mayonnaise.
