TUNA AND ZUCCHINI CAKES 
1/2 c. chopped onions
1 tbsp. butter
1 (6 1/2 oz.) can tuna (drained)
1 c. shredded zucchini
2 slightly beaten eggs
3/4 c. fine dry bread crumbs
1/3 c. snipped parsley
Salt and pepper
2 tbsp. cooking oil

Cook onions in butter until tender, not brown. Remove from heat. Add rest of ingredients, save 1/2 cup bread crumbs. Stir until combined. Shape into six patties. Cook in oil over medium heat 3 minutes per side or until golden brown. Makes 3 servings.
