BEER BATTER LAKE TROUT 
Trout filets
Pancake flour
Salt
1 can beer
1 tbsp. sugar

Open a can of beer in the morning so it is flat before evening use. Dry trout filets on paper towels. Add enough pancake flour mix to one can of beer to form a thin batter. (It will thicken on standing). Add sugar and a dash of salt and mix. Dip whole filets or pieces in batter and fry very quickly in an inch of hot oil in a cast iron skillet. Turn when brown, drain on paper towels and serve immediately.
