BROILED RAINBOW TROUT WITH HERB
MAYONNAISE
 
6 tbsp. reg. or light mayonnaise
1 clove garlic, minced
1 tbsp. lemon juice
Herbs to taste
Dash of pepper
4 Clear Springs Brand Idaho Rainbow Trout fillets (4 oz. each)

Combine mayonnaise, garlic, lemon juice, herbs and pepper in bowl; mix well. Cover flesh side of each trout fillet with 1/4 of mayonnaise mixture. Broil 4 inches from heat source for about 3 to 5 minutes or until fish flakes with a fork and topping is bubbly.

My husband likes to trout fish a lot. I am not a fan of fried fish because to diet restrictions; I have been looking for a good broiled recipe for trout. I HAVE FOUND A GREAT ONE!! It is great. The fish I broiled was about 3/4 lb and it took about 4 minutes on each side because of the thickness. I may try this on other fish. Yummy!
