MARINATED VEGETABLE TOSS 
1 (1 1/2 lb.) bunch broccoli
1 med. head cauliflower
2 carrots, scraped and sliced
1 (8 oz.) can sliced mushrooms, drained
1 (8 oz.) jar olives, drained
1 (8 oz.) bottle low calorie Italian dressing

Wash and trim broccoli and cauliflower into bite sized pieces. Cook broccoli, cauliflower, and carrots in boiling water 3 minutes. Plunge vegetables immediately into ice water. Drain well when cool. Combine cooked vegetables and remaining ingredients, tossing gently. Cover and chill at least 3 hours before serving. Yield: 12 servings.
