PERFECT CHEESE SAUCE 
1 c. cold milk
2 tbsp. instantized flour (Wondra)
1/4 tsp. salt
1/4 tsp. dry mustard
1/8 tsp. pepper
2 tbsp. butter
1/2 c. (2 oz.) shredded cheddar or processed American cheese

Mix all ingredients except cheese in saucepan. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute. Stir cheese into hot sauce until melted. Serve over vegetables, open-face sandwiches, macaroni or egg dishes. Makes 1 cup.
