SPINACH-COTTAGE CHEESE MOLD | |
1 (10 oz.) pkg. frozen chopped spinach 1 env. unflavored gelatin 1/2 c. cold water 2 tsp. sugar 1/2 tsp. salt 1/3 c. strained lemon juice 1/2 c. finely chopped celery 1/2 c. chopped onion (I use 2 tsp. dried onion flakes) 1/2 c. mayonnaise 1 (12 oz.) carton sm. curd cottage cheese 1/2 tsp. Tabasco 1 tsp. Worcestershire sauce Salt to taste (I use non) Thaw spinach, drain and chop finely. Sprinkle gelatin over cold water in small saucepan, heat over low heat until dissolved. Add sugar and salt and stir. Remove from heat. Add enough water to the 1/3 cup of lemon juice to make 1/2 cup. Add to gelatin mixture. Mix cottage cheese, mayonnaise and other ingredients. Pour liquid over this mixture and mold. Refrigerate. This will keep well. |
