SPINACH COTTAGE CHEESE SALAD 
1 pkg. chopped spinach
1 pkg. lemon Jello (3 oz.)
1 c. hot water
1 c. cottage cheese
1 c. mayonnaise
1 tbsp. lemon juice
3/4 c. chopped celery
1/2 c. chopped onion
Scant salt & pepper

Thaw and drain spinach. Press out some of the liquid. Dissolve Jello in hot water. When cool but not thick add remainder of ingredients. Pour into pan or mold which has been sprayed with Pam. Chill until firm, unmold onto lettuce plate.
