CUSTARD TARTS
1 c. flour
Pinch salt
4 tbsp. butter
1 tbsp. sugar
Few drops vanilla essence

CUSTARD:

1 egg
3 tbsp. milk
Pinch ground nutmeg
1 tbsp. sugar

Sift flour and salt. Rub in the butter until mixture resembles fine bread crumbs. Stir in 1 tablespoon sugar and vanilla essence. Mix in just enough cold water to make a stiff dough.

Roll out the pastry and cut out 8 (3 inch) circles and fit into greased patty tins (the bottom half of muffin pans would do). Beat the egg with 1 tablespoon sugar and the milk. Pour into pastry cases and sprinkle with nutmeg.

Bake in the center of a 400 degree oven for 20 minutes, or until custard is set and pastry cooked through. Eat cold the same day.
