RICE OR GRAPENUT CUSTARD 
1 qt. milk (total liquid)
1/2 c. sugar
1/4 tsp. salt
4 eggs, beaten slightly
1 c. evaporated milk (Pet) (this keeps custard from watering)
1 c. cooked rice or Grapenuts
1 tsp. vanilla
Butter
Nutmeg or cinnamon

Grease baking dish with butter. Add rice or Grapenuts to cover bottom (raisins also may be added). Scald 1 cup of evaporated milk plus regular milk (1 quart total) with sugar and salt. Add this to egg mixture, is then strained. Add to baking dish. Sprinkle with nutmeg; dot with butter. Place baking dish into a pan with hot water. Place all into oven. Bake at 350 degrees for 1/2 hour or until knife inserted into center comes out clean.
