CUSTARD RICE PUDDING | |
2 or 3 eggs 1/3 c. sugar 2 c. scalded milk 1 1/4 c. cooked rice 1/4 tsp. salt 1/2 tsp. vanilla 1/8 tsp. cinnamon 1/2 c. raisins (if desired) Beat eggs slightly, add sugar and salt. Scald milk and add slowly to egg mixture, stirring constantly. Add rice, flavoring and raisins, if used. Pour into greased baking dish and bake for 40 to 45 minutes in a 350 degree oven until set. I bake mine at 400 degrees for the 1st 15 minutes then turn down to 350 degrees and bake until set, about 30 minutes more. |
