DOT'S LEMON SNOW WITH CUSTARD
SAUCE
 
LEMON SNOW:

2/3 c. sugar
1 env. gelatin
1/8 tsp. salt
2 egg whites
1 1/4 c. water
1/4 c. lemon juice
1 tsp. lemon rind, grated

CUSTARD:

1 1/2 c. milk
2 egg yolks
1 c. sugar
1/4 tsp. salt
1 tsp. vanilla

LEMON SNOW: Combine sugar, gelatin and salt in saucepan. Add water, stir until gel is dissolved 3 to 6 minutes. Remove from heat. Stir in lemon juice and rind. Pour in bowl and chill until thick. Beat until light and fluffy then beat 2 egg whites stiff. Add gel to whites and beat until mixture holds shape.

CUSTARD SAUCE: Scald milk in boiler, beat egg yolks slightly, add sugar, salt, add to milk. Pour back in boiler and cook until custard coats a spoon. Add vanilla. Cool and chill.
