ENGLISH MUFFINS 
4 - 4 1/2 c. flour
1 pkg. dry yeast
1/2 c. whole wheat flour
1/2 c. wheat germ
1/2 c. quick rolled oats
1 c. nonfat dry milk
3 tbsp. sugar
2 tsp. salt
2 c. warm water
1/4 c. oil
1/4 c. cornmeal

In a large mixing bowl stir in 2 cups flour, all other ingredients (except cornmeal). Beat 3 minutes. By hand stir in remaining flour to make a firm dough. Place in greased bowl, cover and let rise 60 minutes. Pinch dough down, cut in half. On a surface sprinkle cornmeal and roll each half to 1/2" thickness. Cut in 3" rounds, let rise. Bake cornmeal side down on greased electric griddle at 325 degrees until golden brown, about 8 minutes. Turn and bake on other side 8 minutes. Cool on rack. Split with a fork, toast and butter. Much better than the one you buy.
