SALMON CROQUETTES 
1 can salmon
4 lg. boiled or mashed potatoes
1 c. cracker crumbs
3 tbsp. salad dressing
1 egg and yolk of 1 egg
Salt and pepper to taste

Mix potatoes with shredded salmon, put in cracker crumbs, dressing and eggs. Beat white of egg just a little, add 2 tablespoons water. Form into small balls, roll in egg, then cracker crumbs and fry in hot lard as you would doughnuts. Serve hot or cold.
