GRANDMA LEIBOWITZ' FISH
CROQUETTES (Pass)
 
I don't remember Grandma Leibowitz as being a great cook. She had other wonderful qualities. But her latkes were okay, though not as good as Grandma Ratner's. And she put sugar in her spaghetti water, though I liked her sauce. Her croquettes, however, are memorable, particularly the salmon (which my mother later made as her own signature dish and which she misses making for me now that I'm a vegetarian) and the croquettes made out of left-over gefilte fish. Here's Grandma's recipe, to the best of mommie Rosie's recollection. This recipe can be adapted to anything - even tofu, which I highly recommend. Eggs Onion Potatoes Carrots Matza meal

Grate the onions, carrots and potatoes. Mix together with eggs and mashed fish or cubed tofu. Form into bulbous croquette shapes. Coat with matza meal. Fry quickly in vegetable oil, just enough to make it crisp, about 8 minutes. Bake in hot oven for about 15 minutes. Enjoy.

Tofu is an excellent source of protein. It is also very versatile, absorbing the flavor of whatever it's cooked with. Saute it first in onion or garlic or whatever flavor you'd like the croquette to be.
